Keynote Speaker: Star Waters
In Portland, Oregon, Star worked as a Community Health and Lay Diabetes Educator at Neighborhood Health Clinics, Inc., where she facilitated better communication between doctors and patients, conducted cooking classes, and performed food preparation demonstrations to the community and on local telev. Her famous Zusketti dish earned her a feature in The American Diabetes Association’s Newsletter, going out to California, Washington, Oregon, Utah, and Idaho, expanding her influence.
Star has partnered with notable organizations such as The State of Oregon Health Department, Multnomah County Health Department, The American Diabetes Association/Oregon, Susan G. Komen, Kaiser Permanente, Portland State University, and The American Heart Association.
Expanding her outreach, Star became a radio show host and podcaster. She co-founded "Sisters Speak Wellness," an online group addressing health disparities, wellness, and food choices within the African American community, promoting the message: "Let Thy Food Be Thy Medicine. Let Thy Medicine Be Thy Food."
